In a typical Corbières village, Thérèse and Bernard
Galy, wine growers, offer you meals cooked in the traditional manner.
Using fresh farm products, she will introduce you to the joys of the
simple cuisine which was so much appreciated by our elders.
Our elders used to eat rabbit, duck, chicken, stuffed fowl, cassoulet
or fricassee and they used to cook over wood fire.
Madame Galy's perpetuating this culinary tradition is not surprising.
She speaks about it with passion and the simplicity of experienced people:
« To me, a meal has always been a celebration. Having one's family
gathered around a good meal, a good wine, is one of the simplest and
most pleasant things I’ve ever known. »
Day after day, madame Galy cooks for her guests with the same passion
for good food ( for life ? ).
